The foundation for our original menu was rooted in the rich, flavorful sauces crafted from New Mexico-grown chilis. Harvested early in the season, these chilis were meticulously processed to create our signature green chile sauce. Any remaining chilis allowed to ripen to a vibrant red were then harvested, strung into ristras, dried under the scorching New Mexico sun, and eventually ground into the fiery red chile powder that forms the heart of our spicier sauce. Maintaining a commitment to using only chilis sourced from our homeland, Anita has always held firm on this guiding principle, an ethos appreciated by those who have savored our dishes before.
With eight restaurants currently operational and more poised for launch in the near future, we proudly serve thousands of satisfied customers daily. Our menu has evolved over time to offer an expanded array of traditional New Mexican fare alongside beloved American classics.
All of our locations proudly offer breakfast, lunch, and dinner service seven days a week, some opening their doors as early as 5:00 a.m. We take pride in ensuring that our entire menu is available for diners seeking both sit-down meals and convenient carryout options.
